Holiday Bite-Sized Treats: How to Use Christmas Leftovers into New Year’s Eve Appetizers

Party snacks doesn't have to be elaborate, so New Year's presents a perfect opportunity to use up what's left. The key rule is to stick to items to just one bite—no one wants to manoeuvre a fork. Guests just want a comforting taste of hearty fare with a decadent twist.
If you have a bit of cured fish left, layer it on blinis and top it with affordable roe. Mini fishcakes are also an ideal choice: If you have remaining fish or flaked salmon, fold it through mashed potato, blend with fresh herbs, citrus, and fried leeks, then coat in panko and fry until golden.
You could also get creative with Spanish croquettes. Make the bechamel a few days ahead, then use leftover ham, chicken, or foraged fungi for the interior. Blitz stale bread into breadcrumbs to coat them, then cook until crisp. Savoury pastry mixtures are another natural home for those breadcrumbs, or use them as a coating for chicken pieces. For flavour, just add a bit of citrus zest and thyme, and they'll taste so much more. As an aside, croissants make superb crumbs, too.
One beloved treat at this time of year is a leftovers sandwich, and that doesn't have to stop after Boxing Day. Get some ham and turkey in an airtight container and freeze. While you're at it, set aside some cranberry sauce and sweet glaze in the fridge. When needed, thaw the meat, then place it in a preheated oven with the saved glaze for a brief period. Cool and slice thinly, then arrange on top of some sourdough and assemble sandwiches with lots of cranberry sauce. Slice into bite-sized pieces for a surefire hit.
Remaining poultry, meanwhile, could be transformed into a zingy salad. You often have a bit of dark meat left over, and it's perfect for something full of flavour. Shred the meat, then crisp it slowly in a pan, and mix with leftover cranberry sauce thinned with lime juice, a spoonful of soy and a little chilli oil. Garnish with chopped herbs and some green onions, and present in little gem leaves.
Transforming Leftover Vegetables
Veg, meanwhile, can be scrubbed up and fit for a party with a big batch of fried potato cake. Mix all your remaining vegetables with herbs, then season and add flour. Stamp out portions to roughly the size of small rounds, then keep in the freezer. Refresh in a preheated oven for a few minutes and top with your choice of topping—perhaps sliced beef and sharp horseradish. A word to the wise, though: set some aside for a late breakfast the next day.
